If you’re looking for a tasty ‘sugar-free’ jam, this is the perfect recipe as it contains only four simple ingredients and only takes 20 minutes to make.
The recipe works great with many fruits such as raspberries, blueberries, strawberries etc.
What you’ll need:
2 tablespoons of Freshly squeezed Lemon/Lime or Orange juice
2 tablespoons of honey
2 tablespoons of chia seeds
Place the fruit, juice and honey in a saucepan over a medium heat. (If using strawberries, you may want to chop them first).
Once the fruit starts to break down slightly, mash it up with a fork or potato masher and simmer for 5 minutes.
Take off the heat and add the chia seeds, leave aside for 15 minutes and let the seeds do their magic!
The jam should thicken up nicely once the chia seeds start to expand and absorb the liquid.
If you like it a little sweeter, just add more honey to taste.
