Low-Carb Jam

Low carb dieting can have great benefits, but sometimes you just need a sweet fix!

This recipe is great as its packed flavour, easy to make, and won’t rocket your blood sugar level.

The recipe works great with various berries such as raspberries, blueberries, blackberries, strawberries etc.


What you’ll need:

250g Berries of your choice

2 tablespoons of Freshly squeezed Lemon/Lime or Orange juice

2 tablespoons of Erythritol tablespoons of chia seeds



Place the fruit, juice and Erythritol in a saucepan over a medium heat. (If using strawberries, you may want to chop them first).

Once the fruit starts to break down slightly, mash it up with a fork or potato masher and simmer for 5 minutes.

Take off the heat and add the chia seeds, leave aside for 15 minutes and let the seeds do their magic!

The jam should thicken up nicely once the chia seeds start to expand and absorb the liquid.
